After scouring the web for recipes, all of which contained a full cup (or more) of oil *yikes* and/or 3 cups of sugar, I went out on my own and this is what came to be. It was a big hit at Bible study that night, btw

Pumpkin Muffins
2 c mashed pumpkin (either freshly prepared or canned, but fresh is oh so very yummy!)
2 c unbleached flour
1 c whole wheat flour
3/4 c white sugar
3/4 c firmly packed brown sugar
2 tsp baking soda
1/2 tsp baking powder
2 tsp ground cloves
2 tsp ground cinnamon
2 tsp ground nutmeg
1 tsp ground allspice

Easy Pumpkin Cake
1 box yellow cake mix
2 eggs
1/4 cup water
1 cup pumpkin puree
2 tsp baking soda
1 1/2 tsp pumpkin pie spice
Preheat oven to 350* F
Mix all ingredients in bowl with electric mixer at medium speed for about 2 minutes. Scraping sides of bowl as needed.
Pour into prepared pan(s)
Bundt pan – 35-40 minutes

Yield: 2 deep dish pies
4 cups mashed pumpkin
2 (12 oz) can evaporated milk
4 eggs, beaten
1 1/2 c packed brown sugar
1 tsp cinnamon
1 tsp ginger
1 tsp nutmeg
1 tsp salt

2 2/3 c all-purpose flour
1 tsp salt
