Almost Authentic Gyros

Gyros

1lb lean ground beef (I use at least 80/20 ground chuck)

1 lb ground lamb

3 cloves garlic, crushed

3 tsp dried, crushed oregano leaves

2 tsp onion powder

2 tsp salt

1 1/2 tsp ground black pepper

Mix in a medium bowl for 2 minutes or so. You want the spices well incorporated. Next shape into a loaf, just like a meatloaf.  Bake at 350*F for one hour, until no longer pink and juices run clear.  Let sit for 5 minutes, then slice thinly. Serve in pita bread with tomato, onion and we like cheese with ours. Oh and of course the cucumber yogurt sauce (recipe follows)

Cucumber Yogurt Sauce

Make this before you start your gyros, it needs to be refrgerated for a little bit.

8 oz plain, low-fat yogurt (get the thicker Greek style if at all possible)

1/3 c seeded, chopped cucumber

2 Tbsp finely chopped onion

1 clove garlic, crushed

1 – 2 tsp granulated sugar

Mix ingredients in a small bowl (I often use my mini food processor for the whole process).  Cover and refrigerate. Ideally, a good 30 minutes, minimum.

Spoon/drizzle on top of stuffed pitas.
