Now THAT’s a Muffin Pumpkin Muffins

Pumpkin Muffins 

2 c mashed pumpkin (either freshly prepared or canned, but fresh is oh so very yummy!)
2 c unbleached flour
1 c whole wheat flour 
3/4 c white sugar
3/4 c firmly packed brown sugar
2 tsp baking soda
1/2 tsp baking powder
2 tsp ground cloves
2 tsp ground cinnamon
2 tsp ground nutmeg
1 tsp ground allspice
1 tsp salt
2/3 c oil (I only use olive)
3 eggs

Preheat oven to 350* F
Lightly grease/spray muffin tin. (recipe says 12 muffins…those mound over a LOT, I have found around 16 to be more reasonable with normal sized muffin tin)

In a large bowl, sift together all dry ingredients.

In a separate bowl, beat together the pumpkin puree, oil and eggs. Stir pumpkin mixture into flour mixture until smooth.
Scoop batter into prepared muffin cups.

Bake at 350* F for 20-25 minutes. Until toothpick inserted into the center of a muffin comes out clean.
