Pumpkin Bread

Pumpkin Bread

After scouring the web for recipes, all of which contained a full cup (or more) of oil *yikes* and/or 3 cups of sugar, I went out on my own and this is what came to be.  It was a big hit at Bible study that night, btw

2 c unbleached flour

1 c whole wheat flour

2 tsp baking soda

1 1/2 tsp salt

2 tsp cinnamon

1 tsp nutmeg

2 c pumpkin puree (fresh or canned)

1 c brown sugar

1/2 c granulated sugar

1 c milk

2 eggs

3 Tbsp butter, softened

1 tsp vanilla

Preheat oven to 350* F. Prepare 2 loaf pans.

Stir dry ingredients together in a large bowl.

Mix in other ingredients until well blended.

Pour into prepared pans and bake at 350*F for 1 hour.
